When they're ready, pick them and get money and more seeds. The more money you get the more upgrades you can buy, including more fields to increase your growing space, But watch out for hungry crows!
The crafty corvids will eat a flower if they see it, or wait around until it's ready, but luckily you have stones to scare them off. Just don't run out or you'll be at their mercy.
